Title: Mandarin Hazelnut Salad

7 c Mixed greens;
- up to 8 c, torn into
- bite size pieces
2 Green onions; chopped
1/4 c Celery; chopped
1 c Mandarin oranges; drained
1 c Oregon hazelnuts;
- roasted, carmelized *

MMMMM----------------------PARSLEY DRESSING---------------------------
1/2 c Salad oil
1/4 c Parsley; chopped
2 tb Sugar
2 tb Cider vinegar
Salt & pepper; to taste
1 ds Tabasco sauce

Parsley Dressing:

Mix all ingredients and allow flavors to blend.

Toss greens, onions, celery, and oranges with dressing. Sprinkle with
hazelnuts.

* Carmelized Hazelnuts:

To carmelize hazelnuts, slowly melt 2 tb sugar in heavy skillet. Mix
nuts, covering well with sugar. Cook until a light amber color. Allow
to cool on wax paper before use.
