Title: Easy Chickpea Gravy

Yield: 8 Servings
2 tb Olive oil or
- other cooking oil;
- up to 3 tb
2 cl Fresh garlic (2 tb);
- up to 3 cl, minced -OR-
1/2 ts Garlic powder
1/2 ts Ginger powder
1 ts Ground coriander
1/2 ts Ground cumin
1/2 ts Paprika
4 c Vegetable stock;
- unsalted -OR-
2 Veggie bouillon cubes;
- dissolved in:
4 c Water; boiling
1/2 c Chickpea flour (besan)
1 tb Soy sauce; or to taste
Pepper;
- freshly ground, to taste
Salt; to taste
Total time: 25 minutes
Tasty, low fat, gluten free, great for dressing up vegetarian or vegan
thanksgiving recipes or everyday meals without adding a lot more
calories.
Delicious with baked tofu, lentil loaf, mashed potatoes, stuffing. We
also enjoy it over Tofu Veggie Stir Fry.
Dissolve the veggie cubes in simmering water.
Heat olive oil in a heavy saucepan on medium-low.
Saute the garlic and ginger in the oil until it starts to brown.
Add chickpea flour & spices and stir for 5 minutes.
The flour and spices will start to brown and form a thick paste with
the oil.
Gradually add the veggie broth, stirring constantly with a whisk.
Cook until thickened, add soy sauce or Braggs, salt & pepper to taste.
Per serving: 47 cal, 3 g carbs, 4 g fat, 128 mg sodium, 1 g protein,
0 g fiber, low cholesterol
