1/2 c Raw cashews;
- soaked for at least
- 3 hours or up to
- overnight, then drained
1 c Almond milk or
- unsweetened coconut milk
2 tb Maple syrup or agave nectar
1 ts Vanilla extract
1/2 ts Ground cardamom
1 lg Ripe banana;
- peeled, cut into chunks,
- frozen
In a high-speed blender, grind the cashews to a paste. Add the
nondairy milk, maple syrup, vanilla, and cardamom, and blend until
smooth. Add the frozen banana chunks and blend until thick and
creamy. Pour into two glasses and serve at once.
