Title: Better Than Mom's Chocolate Chip Cookies

Yield: 36 Cookies
2 c All-purpose flour
1/2 ts Baking soda
1/2 ts Baking powder
1/2 ts Salt
1 c Natural sugar
1/2 c Unsweetened applesauce
1/4 c Maple syrup
1 1/2 ts Vanilla extract
1 1/2 c Semisweet chocolate chips
1/2 c Nuts;
- your choice, chopped
- (optional)
I gave my revision of my mother's time-tested recipe yet another
makeover--this time I've eliminated the oil! Now they're really
better than Mom's--and better for you, too. Family an friends devour
them with as much fervor as the originals.
Preheat the oven to 350?F. Lightly oil two baking sheets, spray them
with cooking spray, or line them with parchment paper.
In a medium-sized bowl, combine the flour, baking soda, baking
powder, and salt. Set aside.
In a large bowl, combine the sugar, applesauce, maple syrup, and
vanilla, mixing until blended. Add half of the dry ingredients and
mix until just combined. Add the remaining dry ingredients and mix
until just combined.
Fold in the vegan chocolate chips and nuts, if using. Drop the dough
by the spoonful onto the prepared baking sheets, about 2" apart.
Bake until golden brown, 15 to 18 minutes. Let cool completely on the
baking sheets before storing in an airtight container.
