Title: Quinoa Stone Fruit Salad

3 c Quinoa (555 g); cooked
2 tb Agave nectar or maple syrup
- (30 ml)
1 Lime; juice of
1 Peach; pitted, sliced
1 Plum; pitted, sliced
1/3 c Grapes (1 bn); sliced
1/4 c Chopped pecans (30 g)
1/4 c Vegan feta (60 g)
Basil; for garnish
Preparation time: 5 minutes
Cooking time: 15 minutes
Sweet, juicy summer fruit and fluffy quinoa come together in this
beautiful quinoa stone fruit salad. It's ready in just 20 minutes!
Cook the quinoa.
While the quinoa is cooking, slice the peach and the plum, set aside.
When quinoa is finished cooking, drizzle in the agave nectar and lime
juice and stir and fluff together.
Add in the other ingredients and stir to combine.
Garnish with basil and serve.
