2 c All-purpose flour
1/2 c Natural sugar
2 ts Baking powder
1 ts Baking soda
1/2 ts Ground ginger
1/2 ts Salt
1/2 c Vegan butter; softened
1/3 c Dates; pitted & chopped
1/4 c Unsalted cashews;
- dry roasted, chopped
1/4 c Plain nondairy milk;
- unsweetened
1 ts Vanilla extract
Preheat the oven to 400?F. Lightly oil a baking sheet and set aside.
In a large bowl, combine the flour, sugar, baking powder, baking soda,
ginger, and salt. Cut the vegan butter into the flour mixture until
crumbly. Mix in the dates, cashews, nondairy milk, and vanilla,
stirring until just blended. Do not over-work the dough.
Transfer the dough to a lightly floured work surface. Using a lightly
floured rolling pin, roll out into a circle about 3/4" thick. Cut
into 12 wedges and place on the prepared baking sheet.
Bake on the center oven rack until golden brown, 15 to 20 minutes.
Serve warm.
