2 tb Olive oil
4 lg Portobello mushroom caps;
- gills scraped out
Salt
Black pepper; freshly ground
4 Vegan burgers
4 Burger rolls;
- lightly toasted
Heat 1 tb olive oil in a large skillet over medium heat. Add the
mushrooms and cook until they begin to soften, about 5 minutes. Flip
the mushrooms over, season to taste with salt & pepper, and cook
until browned and tender, about 5 minutes more. Keep warm over very
low heat.
While the mushrooms are cooking, heat the remaining 1 tb olive oil in
another large skillet over medium heat. Add the burgers and cook,
turning once, until browned on both sides and hot inside, 8 to
10 minutes total.
To serve, place a burger inside each mushroom cap and place on the
rolls. Serve hot.
