1 c Cooked brown rice
1/2 c Cooked bulgur; medium grind
1 c Zucchini;
- grated, squeezed dry
1/4 c Onion; grated; squeezed dry
1/4 c Carrot; finely grated
1 cl Garlic; minced
1/2 c Vital wheat gluten
1/4 c Red bell pepper;
- roasted, chopped
2 tb Fresh parsley; minced
Salt
Black pepper; freshly grated
2 tb Olive oil
Place the rice, bulgur, zucchini, onion, carrot, and garlic in a food
processor and pulse to combine. Add the vital wheat gluten, roasted
pepper, parsley, and salt & pepper to taste, and process until well
combined. Shape the mixture into 4 patties.
Heat the olive oil in a large skillet over medium-high heat. Cook the
patties until golden brown on both sides, 5 to 8 minutes total.
Alternatively, place the patties on a lightly oiled baking sheet and
bake at 350?F until browned on both sides, turning once, 20 to
30 minutes total. Serve hot.
