8 oz Baked, marinated tofu or
- seitan
2 tb Hoisin sauce
1/3 c Vegan mayonnaise
1 ts Sriracha; up to 2 ts
1 ts Fresh lime juice; up to 2 ts
4 Baguettes (7");
- split horizontally
1 lg Carrot; shredded
1/2 md English cucumber; peeled;
- cut into thin slices
1 c Fresh cilantro leaves
2 tb Pickled jalapenos; sliced
Cut the tofu horizontally to create thin slabs. Spread each tofu slab
with a thin layer of hoisin sauce. Set aside.
In a small bowl, combine the mayonnaise, sriracha, and lime juice.
Mix well to combine.
Spread the mayonnaise mixtture on the cut sides of the baguettes.
Layer each of the baguettes with the reserved tofu slices, shredded
carrot, cucumber slices, cilantro, and jalapenos. Close up the
sandwiches and serve immediately.
