1 tb Olive oil
1 md Onion; chopped
1 tb Curry powder
1 lb Fresh spinach;
- tough stems removed,
- leaves coarsely chopped
Salt
Black pepper; freshly ground
1 c Brown lentils;
- cooked or canned,
- well drained
Traditional Pizza Dough
Preheat the oven to 450?F.
Heat the olive oil in a large skillet over medium heat. Add the onion,
cover, and cook until softened, about 5 minutes. Add the curry powder,
stirring to coat the onion. Add the spinach and salt & pepper to
taste. Cook until the spinach is wilted and just tender, 2 to 4
minutes. Stir in the lentils, then taste and adjust the seasonings.
Set aside.
Punch the dough down. On a lightly floured work surface, roll out or
stretch the dough into a circle about 1/4" thick. Lightly oil a pizza
pan or baking sheet and place the dough on it, stretching it to fit.
Bake on the bottom oven rack for 8 minutes.
Remove from the oven and top with the spinach & lentil mixture,
spreading it to within 1/2" of the edge. Bake until the crust is
golden brown, 10 to 12 minutes. Serve hot.
